Culinary Arts 2: Baking, Pastry, and More! (HFC1191B)

Whether you aspire to be a world-class chef or just want to learn the skills needed to create your own dishes, Culinary Arts 2 will help you build a strong foundation and grow your knowledge of this exciting industry. In this course, you will explore baking and desserts, learn how to prepare proteins, and study nutrition and safety in the kitchen. You will also enhance your understanding of sustainability in the food industry, learn to prepare meals from a global perspective, and dissect the business of cooking, from managing a kitchen to successfully running a catering company. Discover the delights that await you on this delicious culinary adventure.

You will be doing lots of baking and cooking in this course! If you take this course, you need to be prepared to purchase the ingredients to make the foods required.  You will be making:
  • Quick bread, yeast bread, and bread from a mix
  • Two different pies and a pastry made with laminated dough
  • Cookies and dessert pastries
    • You will make four different types (two recipes).
    • You will experiment with cookie taste and texture and make pastries with choux paste (used for cream puffs or eclairs).
  • A cupcake, a sheet cake, and a basic layer cake; two different types of icings
  • A Dessert Plate that includes several items:
    • A frozen element
    • An element that requires tempered chocolate
    • A sauce, coulis, syrup, or jam
    • A complex decorative element that includes frosting or icing
  • Three different types of frozen desserts (such as frozen custard, sherbet, sorbet, ices)
  • Protein foods using moist and dry cooking methods
  • An ethnic meal
